Spice Up Your Life With Our Favourite Vegan Chili Recipe!

Ingredients:

Protein:

  • 1 package of Beyond Meat

Veggies:

  • 6 cloves of garlic, minced
  • 1 red onion, chopped
  • 1 jalapeno, chopped
  • 2 yellow onions, chopped
  • 1 bell pepper, chopped
  • 1 cup of mushrooms, sliced
  • 1 cup of corn

    Spices:

    • 3 tablespoons chili powder (more if you like it spicy)
    • 1 teaspoon oregano
    • 2 tablespoons sugar
    • 2 tablespoons cumin
    • 1 teaspoon cayenne
    • 1 tablespoon smoked paprika
    • 1 teaspoon salt
    • 2 tablespoons nutritional yeast
    • 1/2 teaspoon pepper

      Pantry Items:

      • 2 cans of kidney beans, rinsed
      • 1 can of tomato sauce
      • 1 can of diced tomatoes
      • 1 cup of mushroom broth
      • Olive oil
      • Flour or corn starch

        Directions:

        1. Cook the Protein: In a large pot, cook the Beyond Meat until fully cooked through. 

        2. Sauté the Veggies: Add the minced garlic, chopped red and yellow onions, and jalapeno to the pot. Drizzle a small amount of olive oil over the mixture and stir. Allow this to cook on low heat for a few minutes until the onions start to soften and release their delicious aroma.

        3. Add the Spices: Sprinkle in all the spices: chili powder, oregano, sugar, cumin, cayenne, smoked paprika, salt, nutritional yeast, and pepper. Stir well to ensure all the ingredients are evenly mixed and coated with the spices. Your kitchen will start to smell amazing!

        4. Combine the Pantry Items: Pour in the rinsed kidney beans, tomato sauce, diced tomatoes, and mushroom broth. Stir everything together and allow this to simmer. This is where the magic happens as all the flavours melt together.

        5. Incorporate the Veggies: Add the sliced mushrooms and the chopped bell pepper. (We prefer to add ours near the end so they stay a bit crisp, but if you like them well-cooked, add them in earlier). Toss in the corn and let the chili continue to simmer.

        6. Thicken the Chili: On a low simmer, add a bit of flour or corn starch to thicken the chili to your preference. We like our chili a bit thicker, so we usually add about 3 tablespoons. 

        7. Serve and Enjoy: Once your chili has reached the desired thickness, it's ready to serve! Ladle it into bowls and enjoy it hot. This chili is perfect on its own or served with a side of crunchy bread or over a bed of rice.

        Storage: For storing, let the chili cool completely before transferring it to an airtight container. It will keep in the refrigerator for up to 5 days. For longer storage, freeze the chili in portion-sized containers for up to 3 months. When ready to eat, simply thaw overnight in the refrigerator and reheat on the stove or in the microwave. This makes it perfect for meal prep or having a quick, nutritious meal on hand.

        • Nothing goes with chili better than a piece of bread with vegan butter or soda crackers. The perfect amount of crunchiness and flovour!
        • You can also scoop your chili with some Tostitos if you want to save on dishes and not have to wash a spoon! 
        • Make the most delicious chili cheese fries by crisping up some fries, putting a scoop (or two) of chili on top, and finishing it off by sprinkling as much vegan cheese as your heart desires on top!
        • Go ahead and add some green onion on it for a bit a extra flavour!
